2 casserole recipes for busy moms to make post practice

If your kids are like most young football players, they are hungry all the time.

And never more so than when practice is over.

But who’s got time to whip up a meal in the few hours between the drive home and bedtime. Showers are needed. Laundry to get started. Homework to finish.

The easy option is fast food or pizza, but c’mon moms, we can do better. With a little prep work the night before, here’s two quick and easy recipes that’s sure to fill that football tummy before sending the kids off to sleep.

French Toast casserole

Ingredients: ½ cup butter, melted; 1 cup brown sugar; 1 loaf bread; 4 eggs; 1½ cup milk; 1 tablespoon vanilla; powdered sugar; ground cinnamon

Directions

Melt butter and add brown sugar. Stir. Pour butter mixture into a 9-by-13 pan and spread.

Beat eggs, milk and vanilla.

Place one layer of bread in pan. Spoon half of egg mixture on top of bread.

Sprinkle a bit of brown sugar and cinnamon.

Add second layer of bread. Spoon egg mixture.

Cover and chill overnight.

Bake at 350 degrees Fahrenheit for 40-45 minutes.

Pizza casserole

Ingredients 6-ounce package shell macaroni; cooked 8-ounce jar pizza sauce; 8-ounce carton cottage cheese; 4-ounce package shredded mozzarella cheese; 4-ounce package sliced pepperoni, halved; ½ cup onion, chopped; ½ teaspoon dried basil; 1 tablespoon grated Parmesan cheese

Directions

Boil water and cook pasta.

In a two-quart microwave-safe dish, combine all ingredients except Parmesan cheese. Blend well.

Sprinkle Parmesan cheese over top, cover and microwave on high for 7 to 9 minutes.

Makes 4 servings.
